Church Cookbook to Fund
UM Memorial Scholarship

“United in Faith, A Collection of Recipes and Memories from Westside Baptist Church” is a cookbook that will change lives.

CookbookThe ring-bound cookbook that offers recipes such as “Cocoa and Cola Cake,” “Fried Green Tomatoes Parmesan” and “Jalapeno Cornbread” may be purchased now at the University of Mobile President’s Office. Cookbooks may be also purchased to be sent to Hurricane Katrina victims at the New Orleans Baptist Theological Seminary. Proceeds from all sales will go to fund a University of Mobile scholarship.

Church members of Westside Baptist Church in Jasper, Ala., compiled a book of recipes in memory of church member Emily Burke Anderson, who passed away in a car accident in 2005.

Dr. Fred Lackey, special assistant to UM president Mark Foley, is pastor of Westside Baptist Church. Lackey said he had known Anderson all of her life and had the privilege of pastoring five generations of her family.


“Emily was very dedicated to the Lord and the totally ministry of the church,” Lackey said.

Marilyn Foley is coordinating efforts to send “United in Faith” cookbooks to faculty and staff of New Orleans Baptist Theological Seminary who lost their homes and possessions during Hurricane Katrina. Donations can be made for the cookbooks in the UM President’s Office.

All cookbook proceeds will go to the “Emily Burke Anderson Scholarship Fund” at the University of Mobile.
